I recently set up a Pinterest account. It was something I’ve been wanting to do to bring some organization to all the internet finds that I have bookmarked. The thing is I don’t want to be merely a “pinner” … I want to be a “doer”. I can potentially go overboard with pinning all the yummy recipes, great household tips, and creative DIY projects. But what’s the point of having so many ideas pinned if I don’t actually try any of them? So, in keeping with the theme of this blog, I want to “make the most” of my pins.
A recipe for Cookie Dough Cheesecake Bars is one that I had found a long time ago. It caught my eye because … well, it’s Cookie Dough Cheesecake Bars!
I like cheesecake, but sometimes, it can get a little too rich for my taste. I actually prefer cheesecake bars because the layer of cheesecake is thinner, and the consistency of it is a bit more firm than a traditional cheesecake. When I was in college, there was a bakery on campus that I would frequent just to buy a small cheesecake bar on my way to class. And that was my lunch. Hey, I was young and poor; my diet consisted of junk food and coffee, and I was good.
This particular recipe reminds me of the one from my college days, except with the added twist of a cookie baked right on top of it. The crunch of the cookie mixed in with the soft smoothness of the cheesecake is heavenly!
